Material

This knife by Masaaki is a stunning example of a Japanese Nakiri. While Nakiri knives are traditionally used for cutting and shredding vegetables, they can also be used for boneless proteins. While its shape is similar to a Chinese cleaver, it is not designed to cut through bone.

Nitro-V Stainless Steel has a fine structure and is known for quality edge retention. The ultra thin blade creates a beautifully weighted knife. Masaaki's family name, Saito, is engraved on the blade.

The natural octagon handle is made from teak and ironbark, locally sourced from Northern Rivers, NSW.

Across his career, Masaaki has used all types of Japanese knives and has gained knowledge of how to handle and care for them. We had the pleasure of working with Masaaki to design these knives exclusively for OKAERI. All of his knives in our collection have stainless steel blades and feature handcrafted handles from locally sourced timber.
